Guava Rose Cake is a light and fluffy sponge cake decorated with thinly sliced guava arranged like a blooming rose. The fresh fruit topping adds color, fragrance, and a naturally sweet finish, making it perfect for a simple but elegant homemade dessert. If soft-seed guava is not available in your area, you can also use other fruits such as strawberries, peaches, mango, kiwi, figs, or mixed berries.
Prep Time: 15 minutes | Total Time: 1 hour | Servings: 1 cake
Ingredients
Cake
5 eggs
50g oil
50g milk
30g sugar, for egg yolks
40g sugar, for egg whites
A pinch of lemon juice
85g cake flour
Decoration
3 soft-seed guavas, thinly sliced
Blueberries, as needed
Whipped cream or frosting, optional
Instructions
Preheat the oven to 320°F (160°C).
Separate the egg yolks and egg whites into two clean bowls.
In the bowl with the egg yolks, add 30g sugar, milk, and oil. Whisk until smooth and fully combined.
Sift in the cake flour and mix until the batter is smooth.
In a clean bowl, add a pinch of lemon juice to the egg whites. Beat until foamy, then gradually add 40g sugar. Continue beating until soft to medium peaks form.
Gently fold 1/3 of the meringue into the egg yolk batter.
Pour the mixture back into the remaining meringue and gently fold until fully combined. Be careful not to deflate the batter.
Pour the batter into the cake pan and smooth the top.
Bake for 30–40 minutes, or until the cake is lightly golden and a toothpick inserted into the center comes out clean.
Let the cake cool completely before decorating.
Spread a thin layer of whipped cream or frosting on top if desired.
Arrange the thinly sliced guava in overlapping circles to create a rose shape. Add blueberries for a fresh finishing touch.
Fruit Note
Soft-seed guava works beautifully for this recipe because it is colorful, fragrant, and easy to slice. If it is not available locally, you can replace it with strawberries, peaches, mango, kiwi, figs, or mixed berries. For the best presentation, choose fruits that are ripe, fresh, and easy to cut into thin slices.
