Cake:

    • 375 g cake flour
    • 5 g salt
    • 1.5 g baking soda
    • 226 g unsalted butter, softened
    • 500 g granulated sugar
    • 22 g vanilla bean paste
    • 6 large eggs
    • 18–20 g matcha powder

Matcha Glaze:

    • 240 g powdered sugar
    • 6–7 g matcha powder
    • 80 g milk

  1. Prepare dry ingredients: In a small bowl, whisk together cake flour, salt, and baking soda. Set aside.
  2. Cream butter and sugar: In a stand mixer, beat butter and sugar until light and fluffy (3–5 minutes). Scrape down the sides, then beat in vanilla bean paste.
  3. Add eggs: Add eggs one at a time, beating well after each addition until smooth and incorporated.
  4. Combine: Add flour mixture and fold with a spatula, mixing just until combined.
  5. Create marble effect: Transfer half of the batter to another bowl. To the remaining half, add matcha powder and mix on low until evenly tinted. Drop spoonfuls of matcha batter over the plain batter and fold together 2–3 times to create a marbled effect.
  6. Bake: Bake for about 30 minutes at 175°C (350°F).
  7. Cool: Cool the donuts in the pan for 15 minutes, then invert onto a wire rack to cool completely.
  8. Make glaze: In a bowl, whisk together powdered sugar, matcha powder, and milk until smooth. Adjust consistency with milk as needed.
  9. Finish: Drizzle glaze over the cooled donuts and enjoy!
